Moving Forward for 2011.

I am very excited for 2011. I can understand why New Year's eve can be such a big deal. I was working, but I greeted the new year with optimism and hope. It was refreshing to say goodbye to 2010 and be able to begin a new year. A couple of people asked me if I had any new year's resolutions. At the time I stated no, but that isn't the total truth. I do have goals for myself in 2011. Honestly, I do not want to blog about all of them in depth, but I will say I want to have a positive attitude and pray more. There have been times in my life that I have felt close to God and I miss that - I am thirsty for more. In 2011 I want to draw closer to God. I believe that it will significantly impact other areas of my life that I would like to improve.

Memorial Weekend - ORV park

John and I took the 4-wheeler to the off road vehicle park, it was a lot of fun riding and watching all the big trucks ride through the water and get stuck again, and again.

Marguerite and Malli come to visit

Marguerite took an I-70 road trip back to Colorado, one of the benefits of living close to I-70 is that we get some road travelers. Yea...
We took the dogs to the lake to swim. They loved it.

The taunting squirrel

This squirrel comes and taunts our dogs for hours, it will lower its head down and chirp at them, if they give up it will climb down the telephone pole till they come to chase it back up.

Oatmeal Chocolate Chip Cookies: healthy

Healthy Chocolate Chip Cookies:

Ingredients

1 cup whole wheat flour
1 1/2 cup all purpose flour
1 tsp baking soda
1 tsp salt
1/2 cup (no sugar added) apple sauce
2 T milled flaxseed
1/2 cup margarine (I use Promise or Smartbalance)
1/4 cup and 2 T - (splenda 1/2 n 1/2 brown sugar mix) or 3/4 cup reg. brown sugar
1/4 cup and 2 T - (splenda 1/2 n 1/2 white sugar mix for baking) or 3/4 cup white sugar
1 tsp vanilla
2 large eggs (substitute for egg beaters if wanted)
1 bag milk chocolate or dark chocolate chips
2 cups rolled oats
2 T milk

Preheat oven 375
Combine: mix four, baking soda and salt in small bowl. Beat apple sauce, flaxseed, butter, white and brown sugar, and vanilla in bowl till creamy. Add eggs one at a time, gradually beat in flour mixture.
Then beat in 2 T milk (because the flaxseed takes out a little moisture)

stir in the chips and rolled oats.
[ My husband does not like oats so I HALF the batter (half for me and half for him). I then put the oats in half of the batter (for me) and leave him with chocolate chip cookies]

Bake: 9-11 min

Oh yea, I dressed Riley up today and then Sarah and mom you would be so proud of me. I sewed up all the things Riley tore up: two cats and a mat. Then she tore it up right after I sewed it so perfectly.

Valentine's day in the Little Apple

John took me to a restaurant called Harry's, it was great. Dessert was an amazing cheesecake with a raspberry sauce. Then we took a picture in the street in front of the restaurant overlooking the old town.

One last trip to Grenada.

I have been in Grenada for a week selling stuff, picking up paychecks, and collecting my rent deposit. It has been quite busy, I forgot how much you walk if you do not have a car.

I have enjoyed quite a few things about Grenada. Walking with friends next to the ocean, the pretty flowers, and fun nights out. I also remember things that I do not like about Grenada: ants, fast drivers (not giving way to walkers), weird Grenadian face rashes, and not having a car.

I love all my friends dearly here. We all move on, but I am moving on sooner than planned. I love you and I can not wait to visit all of you in your home in the states.

Our Move to Manhattan, Kansas

Well, it seems that our move has been successful. We rented a big Penske truck (26 feet) and drove 668 miles. In our first week we got 2 inches of snow. Everyone in Manhattan is nice. That actually call it the little apple. I am already missing my friends in Grenada, but slowly I suppose I will meet new friends.

We will be flying home on December 15th. Tomorrow is Thanksgiving. I am having a few friends over for dinner. I planned on watching the thanksgiving parade, but the cable is out so... no parade or dog show. It will be off to the pool for me.

I wanted to let you know about my friend ryan. Check out his blog
365daysofactivism.blogspot.com. He is raising awareness regarding the life children live when homeless. This should not be allowed, I agree. Read his blog, Christ uses him in a unique way. We all can afford to be more active in the things we believe strongly about.

I am thankful for my close friends and family. I am thankful for shelter and food.
I am thankful for my health and my families health. I am thankful for so many things...
It has been a good year and I am blessed.

we were heading to fish friday in the town of Gouyave to eat some yummy local fish. It was great. I had tuna bobs, lobster, and snapper.

This our second October in Grenada. It was actually a good October. I had a visit from my mom and she brought fall and Halloween gifts. One of the gifts was our John and Sara masks, these got alot of laughs.

John and I arrived Thursday night in Grenada. We got all our luggage (yea). It was a nice day traveling with John and we only had 9 pets on our flight the last leg.
